Smoked Turkey Pepper Jack Quesadilla at home

Smoked Turkey Pepper Jack Quesadilla at home
quesadilla on a baking sheet

So this recipe came about by accident. First, there is a sandwich similar to this that both our husband and we love from a local deli. We pack our husband’s lunch every day and we had started making him a sandwich that was a take on our favorite from the deli. Some minor changes, but still satisfying.

One day, in all of our rushed chaos of the morning, we realized that we had forgotten to buy bread for his sandwiches. Well, let’s be honest here that there are ALWAYS tortillas in our house. We figured it would at least do for that day and we could go get some bread that afternoon. We warned our husband and sent him on his way for the day.

Fast forward to lunch time that day and we get a snapchat from him with a picture of the quesadilla and a caption that said “MMMMMM!!!!” He told us it was satisfying and he wanted us to start making these everyday for a while. That’s saying a lot! He’s the pickiest eater we've ever met and cooking for him on a daily basis is definitely a challenge. To find something he likes is rare so we were excited. He raved about it when he got home and said, “You have to make it for yourself and try!” So we did. And it was as satisfying as he said. We added the honey mustard to ours, but his goes without so you can choose what you like best for yourself! Add some Smoked Baked Beans To your plate for a complete lunch.

Have extra Smoked Chicken Thighs? This would be satisfying meat to add to your quesadilla too. We also suggest dipping your quesadillas into our Smoked White Queso Dip.
