Essential Ingredients for Your Cheesy Sausage Potato Soup
Crafting the perfect Cheesy Italian Sausage Potato Soup starts with selecting fresh, high-quality ingredients. Each component plays a crucial role in building the soup’s incredible depth of flavor and comforting texture. Here’s a detailed look at what you’ll need to create this delightful dish:
- Italian Sausage: The star of the show! For a lighter option without compromising on flavor, I often opt for lean turkey Italian sausage. However, traditional pork Italian sausage works wonderfully and adds a richer taste. Whether you choose mild or spicy, the sausage infuses the broth with its aromatic spices, providing a fantastic base.
- Carrots: Sweet and vibrant, carrots add a lovely color and subtle sweetness to the soup. You can certainly buy pre-shredded carrots for convenience, but I prefer chopping 2 medium carrots myself. A good vegetable chopper makes this task quick and easy.
- Garlic: No Italian-inspired dish is complete without garlic. Four cloves, minced, provide that essential pungent and savory undertone. While pre-minced garlic from a jar is a time-saver, fresh garlic cloves always deliver the most robust flavor.
- Onion Powder: For those with picky eaters who shy away from visible onion pieces, onion powder is a brilliant substitute. It delivers all the aromatic flavor of onion without the texture. If your family enjoys onions, feel free to sauté 1/4 cup of finely chopped fresh onion along with the carrots.
- Potatoes: Golden potatoes are my top choice for this soup due to their creamy texture and ability to hold their shape without becoming mushy. Other waxy potatoes like red potatoes also work well. Peel and cube them into bite-sized pieces for even cooking and easy eating.
- Chicken Stock: The foundation of our flavorful broth. Chicken broth can be used interchangeably, but a good quality chicken stock will provide a richer, more profound taste. Ensure it’s low sodium if you’re controlling salt intake.
- Salt: Essential for seasoning. Use your favorite, whether it’s fine sea salt, kosher salt, or Himalayan pink salt. Adjust to your taste, remembering that the sausage and cheese will also contribute some salinity.
- Pepper: Freshly ground black pepper offers the best aroma and a subtle kick. Standard ground black pepper is also perfectly acceptable.
- Marjoram: This often-underestimated herb brings a delicate, sweet, and slightly woody flavor that complements Italian sausage beautifully. It’s a key ingredient for achieving that authentic Italian profile.
- Basil: Dried basil is preferred in this soup to ensure the flavor is present but not overpowering. It contributes a classic sweet and savory aroma that marries well with the other herbs.
- Oregano: A staple in Italian cooking, dried oregano adds a robust, earthy, and slightly bitter note that ties all the flavors together. Buying it in bulk is a great way to ensure you always have this essential herb on hand.
- Broccoli: Two cups of small, bite-sized broccoli florets add vibrant color, a pleasant tender-crisp texture, and a boost of nutrients. Fresh or frozen broccoli both work well.
- Corn: One cup of sweet corn, whether frozen, canned, or fresh from the cob, provides bursts of sweetness that contrast beautifully with the savory sausage and herbs.
- Peas: Like corn, one cup of frozen peas adds another layer of sweetness, color, and vegetable goodness, enhancing the soup’s overall appeal.
- Milk: To achieve that desirable creamy consistency, milk is key. I use 2% milk to keep it a bit lighter, but whole milk or even a touch of half & half would make the soup even more decadent.
- All-Purpose Flour: This acts as a thickener, giving the soup a lovely, comforting body. You can also use Kamut flour for a nutty flavor, or cornstarch (slurried in cold water first) for a gluten-free alternative.
- Cheddar Cheese: The “cheesy” in Cheesy Italian Sausage Potato Soup! Reduced-fat cheddar works well for a lighter option, but sharp cheddar or even pepper jack can elevate the flavor significantly, adding a spicy kick. Choose a good melting cheese for the best results.

Step-by-Step: How to Prepare Italian Sausage and Potato Soup
Creating this delicious and hearty soup is simpler than you might think. Follow these easy steps to bring a pot of Cheesy Italian Sausage Potato Soup to your table:
- Begin by browning the Italian sausage. Add one pound of Italian sausage to a large Dutch oven or a heavy-bottomed skillet over medium-high heat. Cook, breaking the sausage into crumbles with a spoon, until it is thoroughly cooked through and no pink remains. Drain any excess fat for a lighter soup.
- Next, add the two peeled and chopped carrots to the pot with the cooked sausage. Sauté them for approximately 3-4 minutes, stirring occasionally, until they begin to soften. They don’t need to be completely tender at this stage, as they will continue to cook in the broth.
- Stir in the four cloves of minced garlic. Sauté for about 1 minute, being careful not to let the garlic burn, as burnt garlic can taste bitter. The garlic should be fragrant.
- Sprinkle in the 1/2 tablespoon of onion powder (or chopped fresh onion, if using) and mix it well with the sausage and vegetables, ensuring the flavors are evenly distributed.
- Add the cubed potatoes, 32 oz of chicken stock, 1 tsp of salt, 1/2 tsp of pepper, 1/2 tbsp of marjoram, 1 tsp of dried basil, and 1 tsp of dried oregano to the pot. Stir all the ingredients together to combine them thoroughly.
- Bring the soup mixture to a boil over medium-high heat, then reduce the heat to a simmer. Allow it to simmer gently for 10 minutes, or until the potatoes are fork-tender.
- Once the potatoes are tender, stir in the 2 cups of bite-sized broccoli pieces, 1 cup of frozen corn, and 1 cup of frozen peas. Continue to cook for an additional 5 minutes, or until the vegetables are heated through and the broccoli is tender-crisp.
- In a separate small bowl, whisk together the 2 cups of milk and 2 tablespoons of all-purpose flour until no lumps remain. This creates a smooth slurry that will thicken your soup.
- Pour the milk and flour mixture into the simmering soup, stirring constantly to prevent lumps.
- Reduce the heat to low. Gradually stir in the 1 cup of cheddar cheese (or more, to your preference) until it is completely melted and smoothly incorporated into the soup. Do not boil the soup after adding the cheese, as this can cause it to separate.
- Serve immediately and relish every warm, cheesy spoonful!
Make-Ahead Tips for Italian Sausage Potato Soup
One of the many wonderful qualities of this Cheesy Italian Sausage Potato Soup is how well it adapts to meal prepping. Yes, absolutely! This soup can be made ahead of time, making it an excellent option for busy weeknights or for feeding a crowd. In fact, many find that the flavors deepen and meld beautifully after a day or two in the refrigerator, making it even more delicious upon reheating. I often double the batch simply to have leftovers, knowing they’ll be just as satisfying, if not more so, on subsequent days. Freezing a portion ensures you have a wholesome, homemade meal ready whenever you need it.
Proper Storage and Reheating for Optimal Flavor
To ensure your Cheesy Italian Sausage Potato Soup remains fresh and delicious, proper storage is key. Allow the soup to cool completely before transferring it to an airtight container. Once cooled, it can be safely stored in the refrigerator for up to 3 days. For longer storage, this soup freezes exceptionally well. Portion it into freezer-safe containers or heavy-duty freezer bags, leaving a little headspace for expansion, and freeze for up to 6 months.
Reheating Your Soup:
When you’re ready to enjoy your stored soup, reheating is simple. If frozen, thaw the soup in the refrigerator overnight for best results. Alternatively, you can reheat directly from frozen, though it will take longer. Transfer the soup to a saucepan or Dutch oven on the stove top. Reheat over medium heat, stirring occasionally, until it is heated through. If the soup appears too thick, you can add a splash of milk or chicken stock to achieve your desired consistency. Be gentle when reheating cheese-based soups to prevent separation; avoid boiling vigorously.
How Long Does Sausage Potato Soup Last?
When stored correctly in an airtight container, homemade sausage potato soup will remain fresh and safe to eat for 3 days in the refrigerator. If you choose to freeze it, the soup will maintain its quality for up to 6 months. Always label your containers with the date to keep track of freshness.
